Rhubarb Cooking Recipes

Rhubarb is still a staple in our garden when I was young. We have always been a lot of different dessert recipes over the summer. Here are few tasty rhubarb recipes for your enjoyment.

Rhubarb Muffins

1 1 / 2 cup sugar
1 egg
1 / 2 cup oil
2 teaspoons vanilla
1 cup buttermilk
2 1 / 2 cups flour
1 teaspoon baking soda
1 teaspoon baking soda
1 / 2 cup nut powder
1 / 2 cups of rhubarb 1, the

filling:

1 tablespoon butter, melted
1 1 / 3 cup sugar
1 teaspoon cinnamon

In a large bowl, combine egg, sugar, oil, vanilla, milk, flour, baking soda, baking powder. Add nuts and rhubarb and mix well. Line a muffin pan with paper cups. Pour into muffin cups. In a small bowl, combine topping ingredients. Add garnish each muffin. in an oven at 375 degrees for 20 to 25 minutes.

Bake Pie

3 4 cup sugar and
2 tablespoons flour
2 tablespoons rhubarb eggs, beaten
1 / 4 cup teaspoon vanilla
1 cup sour cream 2 cups rhubarb, finely chopped

Dressing:

1 / 3 cup sugar
1 1 / 4 teaspoon cinnamon cup flour
1 / 4 cup butter

In a large bowl, whisk together sugar, flour and eggs. Add vanilla and sour cream in the mix. Place the rhubarb and stir until well blended. Pour into pie crust 9-inch unbaked. In a small bowl, combine topping ingredients. Stir until mixture is crumbly. Do not put stuffing mixture over the cake immediately. Bake the cake in an oven at 400 degrees for 25 minutes or when the center of the cake is firm. During the last 10 minutes of cooking time, pour the filling mixture over cake.

Rhubarb upside down cake mix package yellow cake

4 cups rhubarb, diced
1 1 / 2 cups sugar
1 pint of whipping cream

Prepare cake mix as directed. Pour into greased 9 x 13 inches. In a medium bowl, combine rhubarb and sugar. Sprinkle mixture evenly over the rhubarb pulp. Pour whipping cream over mixture. (It will be very current.) Bake in oven at 350 degrees for 40-45 minutes or until cake made.
