Spanish style Recipes For Your Microwave

Want to impress your friends with a kitchen all at the party? Here are some recipes that can serve your Fiesta with the microwave. Your guests will think you slaved all day, but do not.

I can use Tupperware microwave utensils to these recipes. Try what you have, but does not recommend or Corningware glass.

Southwestern Chicken Enchiladas

1 pound skinless chicken breast cut into strips

2 tablespoons Chipotle seasoning soup SW

1 / 2 cup chopped red pepper

1 / 2 cup chopped green pepper

1 / 2 cup chopped onion

12 corn tortillas

1 (15 ounce) can enchilada sauce

1 cup shredded cheddar cheese

1 cup water Place the base of a microwave cooker.

Place vegetables and chicken in a shallow oval strainer Tupperware range and coverage. Microwave high 5 minutes. Mix and cook on high 3-5 min. more until chicken is cooked.

At the base of Oval Microcooker, layer 6 tortillas, salsa, chicken and cheese mixture. Repeat until ending with cheese on top.

Cover and cook on Med. Top 70-10 min. Recipe serves sixth

Microwave Spanish rice

1 tablespoon butter or margarine

1 cup long grain rice

1 tablespoon Soup Seasoning Chipotle Southwest

1 (14 1 / 2 ounces) chicken broth

1 / 2 cup salsa

Melt butter in 8-Cup Square Round Heat N Serve ~ 20 seconds. Combine the rice to coat, cover, microwave 2 minutes at high temperature, add remaining ingredients, cover and microwave on high 3-4 minutes.

Mexican chicken lasagna

Prepare the filling:

2 to 3 ounces of cream cheese packet

2 cups cooked turkey or

1 / 3 cup milk

½ cup shredded Monterey Jack cheese (other cheeses work)

with fill tube.

Layer Tortilla Pieces: 8 5 A6-inch corn tortillas,

prepare the sauce quarts

1 10 ¾ oz condensed cream soup chicken broth

1 4 oz diced green chiles, drained

1 / 3 cup sour cream

¼ c. teaspoon cumin

In a bowl, combine sauce ingredients.

½ cup grated cheese

½ cup crushed tortilla chips

In 8-cup round square with N-Serve hot (Tupperware) layer from corn tortillas, half the chicken filling, half of the sauce. Repeat ending with sauce.

Put ½ cup of cheese on top and microwave power of 70% for 12-15 minutes or until heated through.

Sprinkle tortilla chips on top just before serving. (This section is Optional)

You can also garnish with tomato slices and chopped green onion.
