spicy chicken pasta

Ingredients:

* 1-2 tablespoons extra virgin olive oil
* 2 teaspoons Asian Chile paste, Sambal Oelek
* 1 pound boneless chicken breasts or tenders, cut into 1 inch cubes
* 12 oz butterfly tie pasta * 8 tablespoons basil pesto
* 1 / 2 cup cilantro 1 / 2 cup freshly grated Parmesan cheese

Preparation:

Heat the olive oil and chile paste in a large skillet. Add the diced chicken and cook until browned. Cook pasta in boiling water for water supply. Drain. Place chicken mixture in bowl. Add the pesto, cilantro and Parmesan cheese. Add hot cooked pasta and mix gently but thoroughly. Serve with additional Parmesan cheese is desired. Makes 4 servings.
