Pasta food processing

We dropped the tradition meets the gap between summer and winter holidays. There are parts pasta, or sometimes two in September and October. Weather cools and we can open the house and invite friends to make pasta from scratch.

We will start planning our brunch and light pasta ingredients and divide groups of every flavor. Each individual or couple brings a salad or pasta with meat ready to go. If you've never had homemade pasta, you must give it a try. basic recipe is very simple, here's a quick list of ingredients for a kilo of pasta homemade

• 2 and 1 / 4 cups unbleached flour
• 3 large eggs pinch of salt ·
° WATER, oil or milk (3-4 tablespoons) ·

minced vegetables taste (optional) you prefer to use oil because it will die off as the 'mix and add a good flavor, but some people like water. We also use spinach, broccoli, zucchini or other vegetable flavor, but clearly good. This is where the party starts, as many people to bring their specific characteristics of the plant to create what flavor you want. And we had a real unusual materials, everything goes.

We use a food processor, but may also be mixed by hand. Use the plastic dough blade if you have one, but the work of metal cutting blade. You can combine the dry ingredients into the bowl and pulse several times to mix. Beat three egg whites and yolks combined. Start the mixer and slowly pour the eggs and continue processing until the dough becomes a ball and works from the edge of the container.

This part only takes about 5 minutes. Now, the mixing begins and continues until the dough becomes smooth and elastic. Be sure to dust the work surface with flour and work quickly if you used water instead of oil because it dries faster. Depending on their ingredients and effort, this part may take 10-15 minutes.

We roll the dough back in bowl and cover with plastic wrap to rest for about one hour at room temperature. At our parties, we use this time to make our sauces for each of the different flavors pasta. Pesto is always a default, but many flavors of fresh vegetables are very popular, some cooked and some not. We use hand crank pasta machines (they cost about $ 10 - $ 13) because they are quick and easy.

Always make sure you run the tests in the paste through a new pasta machine to clean the residue from the manufacture (all alone I never bought a grease, oil, or even the deposit). Either make or buy more pasta drying racks, because the pasta will have to hang dry for 2-3 hours before cooking (some people dare not very long but we thought it was really improve the taste) .

The first process with the pasta machine is to flatten the dough into portions of approximately 1 / 16 inch thick, 4 inches wide and perhaps 12-inches long (the length and thickness of long strand of pasta is .) Once the size and thickness that runs through the cross section of the slab. You can have different shapes and sizes depending on their leaves available. The standard style fettuccine is the most popular of our pieces, but you can cut slabs of dough forms (such as cookie cutters) to the form that you can do.

It is difficult to describe the antics that occur when the first-pass through this routine house pasta. Add to this a glass of wine and two before you know, the wet pulp hangs everywhere. This is a good time and the final reward is worth the work. Generally found to play group games, while the pasta is drying. Sometimes there may be a football game or a movie to watch.

When the pasta is dry, the beginning of boiling and in 30-40 minutes there is a wide range of pasta sauces and flavors to try for dinner. Rupture between the salads and meat dishes, and then everyone mixes and matches their choice. Believe me when I say nobody goes home hungry after one of these parties.

You may have these parties at any time of year, spring would be good for the greatest number of vegetables will be available. We have just started to do in the fall, and thus stuck. You can still find many good recipes that come with your robot or pasta machine to try. Or simply on your own experience. It's fun and a bit of an economical way to celebrate all year.
